Last weekend I posted on my Instagram about the easy breakfast casserole I made Sunday morning! This stuff is so easy and yummy! It’s great for a Sunday brunch or for Thanksgiving or Christmas morning breakfast! You can prepare it all the night before then pop it in the oven when you first wake up and within an hour breakfast is good to go! Grab your favorite cup of coffee and your morning is set! :)
Easy Breakfast Casserole
- 1 Lb. Breakfast Sausage
- 1/4 Green Pepper Finely Diced
- 1 Tsp. garlic Finely Diced (approx. 1 clove)
- 1 Bag Frozen Hash Browns
- 1 Can Cream of Mushroom Soup
- 2 Cups Grated Sharp Cheddar Cheese
- 4 Green Onions Finely Diced
- 8-12 Eggs I used 8, some recipes call for 12
- 1/4 - 1/2 Cup Milk To whisk with eggs (I used Coconut Milk)
- To Taste Salt & Pepper
- 1/4 Tsp. Garlic Powder
Preheat Oven to 350 Degrees
Brown sausage on medium-high heat, when it’s almost completely done add in the green pepper and garlic until pepper is tender, drain grease.
While sausage is cooking, in a large bowl mix together hash browns, cream of mushroom soup, ½ cup of cheese, and salt and pepper to taste (this can be kind of hard to stir with the frozen hash browns but just break them up a little before you pour them into your bowl).
Add the sausage and green pepper scramble into the bowl with the hash browns and mix well.
Grease 9x13 baking dish with cooking spray.
Pour hash brown mixture in and spread evenly.
Whisk together eggs, milk, ¼ tsp salt, ¼ tsp pepper, ¼ tsp garlic powder.
Pour the egg mixture all over the hash browns in the dish. Try to get the egg mixture over the entire thing so it mixes through the whole casserole. It’s not necessary to actually mix it because the eggs will drip down.
Add the green onions all over the top.
Bake for 45 minutes.
Remove and add remaining cheese all over the top.
Place back in oven for another 10 minutes or so.
You should be able to stick a knife in and it come out pretty clean (besides the sticky cheese) you just want the egg to be cooked.
Let sit for approximately 5-10 minutes then serve with your favorite cup of coffee :)
Recipe NotesThis recipe only made about 8 servings for us because my hubby eats very large portions ;) It could easily serve more like 10!
